Unique Recipes for Those Looking To Try Something Different This Pancake Day

We love an excuse to brighten up a weekday here at Plantation Shutters Ltd. So whether Shrove Tuesday holds religious importance to you and your family, or whether your taste buds are leading the celebrations, here are some sweet and savoury pancake recipes that are sure to make your stomach rumble. 

A little about Shrove Tuesday

Shrove Tuesday is a Christian feast day ahead of Ash Wednesday, which marks the start of the traditional fasting period of Lent. Lent prepares Christians for Easter through prayer and reflection of the sacrifice made by Jesus Christ, and the period leading up to his crucifixion and resulting resurrection. Pancakes were a great way to use up the luxuries that were abstained from during lent such as eggs, and the four ingredients came to represent the four pillars of the Christian faith; flour for sustenance, eggs for creation, milk for purity and salt for wholesomeness. Pancake Day is now celebrated by people across the world as it has become notable even without its religious intentions.

Sweet Pancakes 

(all make 6-10 pancakes depending on size)

Peanut Butter Pancakes

For the pancakes: 

  • 200g Plain Flour
  • 6 tbsp Sugar 
  • 2 tsp Baking Powder
  • 250ml Milk 
  • 3 tbsp Peanut Butter
  • 1/2 tsp Vanilla Extract
  • Pinch of Salt 
  • 2 Large Eggs
  • Butter, for cooking 

Cooking instructions: 

Combine all dry and wet ingredients in sperate bowls. Gradually add wet ingredients into the dry mixture and whisk until smooth. Add the butter to a non-stick frying pan. Once melted and hot (being careful not to burn), pour a small amount of the mixture into the pan. Flip the pancake one the top begins to bubble and the edges look cooked. Remove once both sides are evenly cooked. 

Recommended toppings: 

Serve with chopped strawberries and honey or chocolate hazlenut spread. 

Strawberry Cheesecake Pancakes 

For the pancakes: 

  • 200g Plain Flour 
  • 3 tsp Baking Powder 
  • 2 tbsp Light Brown Sugar 
  • 250ml Milk
  • 110g Cream Cheese 
  • 2 Large Eggs 
  • 1tsp Vanilla Extract 
  • 130g Chopped Strawberries

Cooking instructions: 

Combine wet and dry ingredients in two seperate bowls leaving the chopped strawberried to one side. Gradually combine and stir until smooth and fold in the chopped strawberries. Add butter to a non-stick frying pan and once melted and hot (being careful not to burn) pour a small amount of the mixture into the pan. Flip the pancake one the top begins to bubble and the edges look cooked. Remove once both sides are evenly cooked. 

Recommended toppings: 

Serve with chopped strawberries and strawberry syrup. 

Vegan Banana and Blueberry Pancakes

For the pancakes:

  • 1 Ripe Banana
  • Sunflower Oil 
  • 1 tsp Lemon Juice
  • 1/2 tsp Ground Cinnamon
  • 2 Handfuls Blueberries 
  • 100g Plain Flour 
  • 1/2 tsp Baking Powder 
  • 250ml Soya Milk

Cooking instructions:

Mash the banana in a bowl and combine with 1 tbsp oil, the lemon juice and cinnamon. Add the flour and baking powder and gradually stir in the soya milk until smooth. Add 1 handful of the blueberries to the batter, keep the remaining aside to serve. Heat a little oil in a non-stick frying pan. Once hot, pour a small amount on the mixture into the pan. Turn once the top begins to bubble and the edges look cooked. Remove once both sides are evenly cooked.

Recommended toppings: 

Vegan syrup or ice cream and the remaining blueberries.

Mocha Pancakes

For the Pancakes: 

  • 3 Large Eggs 
  • 1tbsp Vegetable Oil 
  • 250ml Milk
  • 250g Self-raising Flour
  • 1 tbsp Cocoa Powder 
  • 1 Shot Espresso
  • 1 tsp Baking Powder
  • 1 tbsp Caster Sugar
  • 1 tsp Vanilla Essence 
  • 1 Handful Chocolate Chips (optional) 
  • Pinch of Salt 
  • Butter, for cooking

Cooking instructions: 

Combine wet and dry ingredients in two separate bowls leaving the shot of espresso to one side. Gradually combine and stir until smooth. Fold in the espresso. Add butter to a non-stick frying pan. Once melted and hot (being careful not to burn), pour a small amount on the mixture into the pan. Turn once the top begins to bubble and the edges look cooked. Remove once both sides are evenly cooked.

Recommended toppings: 

Chocolate sauce and ice cream or strawberries and whipped cream. 

Savoury Pancakes

(all make 4-6 pancakes depending on size) 

Mac and Cheese Pancakes

For the Pancakes: 

  • 60g Self-Raising Flour
  • 175ml Milk 
  • 1 Large Egg 
  • Pinch of Salt 
  • 200g Macaroni Pasta 
  • 200g Grated Cheddar Cheese 
  • 1 tsp English Mustard 
  • Butter, to cook 

Cooking instructions: 

Cook the macaroni according to instructions and allow it to cool. Combine the flour salt in one bowl and whisk together the milk and egg in a separate bowl. Gradually add the wet ingredients to the flour/salt mixture and whisk until smooth. Add a handful of cheese and mustard and stir. Heat some butter in a non-stick frying pan being careful not to burn and add some of the batter. Allow to cook on one side and before turning add a handful of pasta, some more uncooked batter and another handful of cheese. Carefully flip your pancake and cook until batter is cooked and the cheese begins to crisp up.  Serve crispy side up.

Recommended toppings: 

Best served as a side side or on it's own with salad and condiments of choice. 

Bacon, Brie and Cranberry Pancakes

For the Pancakes:

  • 100g Plain Flour 
  • 250ml Milk 
  • 2 Large Eggs 
  • Pinch of Salt 
  • 1 tsp Baking Powder
  • 5 Rashers of Smoked Bacon 
  • Butter, to cook 

For the toppings:

  • 200g Brie 
  • Cranberry Sauce 

Cooking instructions: 

Cook the rashers of bacon (do not cook too crispy) and cut into small pieces removing large pieces of fat. Combine the flour, baking powder and salt and then the milk and eggs separately. Gradually combine the milk/egg mixture into the flour combination and mix until smooth. Add bacon pieces to the mixture. Heat the butter in a non-stick frying pan (being careful not to burn) and add some of the batter. Cook until the top begins to bubble and the sides look cooked. Chop brie into pieces. Once pancake is finished, place onto a grill tray and add slices of brie – heat under the grill until brie is melted/ begins to bubble. Finish with cranberry sauce to serve.

Recommended toppings: 

Brie and cranberry sauce as included.

Horseradish Pancakes served with Smoked Salmon 

For the Pancakes: 

  • 150g Plain Flour 
  • 1/2 tsp Baking Powder
  • 1 tbsp of Caster Sugar 
  • 2 Large Eggs 
  • 250ml Milk 
  • 1 tbsp Horseradish Sauce 
  • 1 Pinch Salt 
  • Butter, for frying

For the toppings: 

  • 1 Pack Smoked Salmon 
  • 1 Lemon 
  • Black Pepper 
  • Cream Cheese (optional)

Cooking instructions:

Combine the wet and dry ingredients in two separate bowls. Gradually combine the two and whisk until smooth. Add butter to a non-stick frying pan. Once melted and hot, pour a small amount on the mixture into the pan. Turn once the top begins to bubble and the edges look cooked. Remove once both sides are evenly cooked. Remove from the heat and add your salmon, lemon and black pepper. You may also opt for some cream cheese.

Recommended toppings:

Smoked Salmon, fresh lemon and black pepper and cream cheese (optional).

Sweetcorn Pancakes with Chorizo, Rocket and Roasted Tomatoes

For the Pancakes: 

  • 120ml Milk 
  • 1 Large Egg 
  • 50g Self-raising Flour 
  • 150g of Tinner Sweetcorn 
  • Salt to Taste
  • Butter. for frying

For the toppings: 

  • Chorizo Sausage 
  • Vine Cherry Tomatoes 
  • 1 Packet of Rocket Leaves

Cooking instructions: 

See recommended toppings for cooking instructions of toppings, you may need to crack on with these to begin with. Liquidise or blend the tinned sweetcorn until mostly smooth. Add the remaining ingredients into the blender and blend until combined into a smooth batter. Add butter to a non-stick frying pan. Once melted and hot, pour a small amount on the mixture into the pan. Turn once the top begins to bubble and the edges look cooked. Remove once both sides are evenly cooked.

Recommended toppings: 

Roast some vine cherry tomatoes with salt and pepper in a 200oc oven for 20-25 minutes until they start to slightly blacken on the skin.

Remove the skin of the chorizo sausage (spicy if you prefer it hot) and cut into small pieces. Add peices to a hot frying pan and cook until slightly crispy.

Add to the top of your pancakes with some fresh rocket.
